
Professor Chaplin graduated in Chemistry from the University of Birmingham, UK, in 1967.
Over the next three years he completed a PhD mainly concerned with the structural and biological studies on the
glycans in human follicle stimulating hormone in a collaboration between the University of Birmingham and the
Birmingham and Midland Hospital for Women. After two years teaching chemistry at the University of Malawi, East
Africa, he returned to Birmingham to continue his work on the glycoprotein hormones and start some enzyme
technology research. His interest in these research areas continued during lecturing posts at the University of
Ghana, West Africa and the Biochemistry Department of the University of Leeds, UK. Since 1985 he has been at South
Bank University, London, where he is Professor of Biotechnology and Head of the Food Research Centre. His current
interests lie mainly with how dietary fibre may interact with the structure of water and potential carcinogens and
so be beneficial to health.
