Scientists from all over the world joined the members of the Senate Commission on the Evaluation of Food Safety (SKLM) to take a critical look at the current state of knowledge on ""Carcinogenic and Anticarcinogenic Factors in Food"". A symposium, organized by the Commission of the Deutsche Forschungsgemeinschaft (DFG), was held in Kaiserslautern in October 1998 to evaluate results, draw conclusions and formulate recommendations. This synopsis of the symposium volume not only provides an overview of our current knowledge on this topic but also points to obvious gaps. Thus the SKLM is making available an up-to-date, scientifically substantiated source of information for a wide range of readers and users.
